Buffalo Chicken & Cheesy Potato Casserole

Another Quick Chicken Recipe

Another chicken recipe from PinterestSprucing up chicken seems to be my favorite pastime, especially since I don't particularly care for chicken! The Pinterest recipes I've found are just that appealing, I can't turn them down! I found this recipe a while back and decided to give it a try...and if we're being honest the most appealing part of the recipe wasn't the chicken but the cheese, potatoes, and bacon!

Here's how I made this recipe my own:

Ingredients
1 pack of chicken tenders (about 6-9 chopped into chunks)
8 potatoes, cubed
1/3 cup of extra virgin olive oil
1.5 tsp of salt
1.5 tsp of pepper
2 tbsp of garlic powder
6 tbsp of hot sauce
1 pack/14 oz. of any kind of cheese you like (I chose sharp cheddar cheese)
1 container/2.3 oz. of Hormel bacon bits
 6-8 stems of green onions (cut to size)


When I first read the directions, I thought they were kind of weird. I consulted with the "original" recipe and it was little different, but made a little more sense, so I ended up combining the two recipes. 

Directions
1. Preheat the oven to 500 degrees
(see weird already...there's nothing I know of that cooks at such a high temperature!)
2. Mix the olive oil, salt, pepper, garlic powder, and hot sauce in a bowl. This is the sauce that mimics a buffalo sauce. You can tweak the ingredients and their portion sizes to make it your own, like I did!
3. Add potatoes to the bowl, put a top on the bowl, and shake it to coat the potatoes with the sauce.
4. Grease the casserole dish. Then scoop the potatoes out of the bowl and into the dish.
5. Cook the potatoes at 500 DEGREES for about 45-50 minutes; turning them every 10 minutes. They will get very crispy. Make sure to continue watching so they won't burn.
6. As the potatoes cook, place the chicken into the remaining sauce in the bowl. Top the bowl and shake to coat.
7. Let the chicken marinate in this sauce until the potatoes have cooked.
8. Once the potatoes have cooked, take them out of the oven.
9. Lower the temperature of the oven to 400 degrees.
10. Put the chicken on top of the potatoes.
11. Mix the rest of the toppings (cheese, bacon, and green onions) in a bowl and add the toppings on top of the chicken.
12. Bake for 15 minutes (or until the chicken is cooked through)
AND there you have it! 

Buffalo Chicken & Cheesy Potato CasseroleThe end result had a good taste to it, but I must admit it was a little TOO crispy for my taste. Even though I thought the recipe was weird, I decided to follow it through since this was my first time cooking it. The next time I'll definitely change this recipe to better suit my needs. I didn't like that the potatoes were overcooked, so I won't cook them at such a high temperature. I'd also feel better cooking the chicken a little longer. I have another recipe where the chicken and potatoes cook together for an hour. I don't see why I can't do that with this recipe! I would then add the toppings at the end to allow them time to melt over the casserole! Sounds like a better recipe to me!

I'll just have to try out and see how it turns out!! If it works, I can always update this recipe!

  2. Well you certainly made it look delicious! I agree, some of the directions were a little weird, and I think your edits to the recipe will turn out quite nicely in the future!

  3. If you try this, please let me know how you cook it...if you follow the directions or switch it up. That 500 degrees was just too much for me!

  4. Yeah, I've definitely got to try it again! As I was going through my recipe pins, I remembered that I pinned another recipe similar to this (without the chicken). I could always pre-cook the chicken and throw it on top of that. There are so many options...but it was good nonetheless!!
