An Easy and Cheesy Side Dish

Asparagus and Parmesan Cheese

I don't like eating the same things over and over. I truly use recipes I find and pin on Pinterest as inspiration in my kitchen. I found this recipe and was excited to try it. I'm shooting for different but I'm also aiming at healthier recipes as well. Recently, I've debuted two chicken entrees (Parmesan Garlic Chicken & One Pan Dinner). Now it's time for a side dish!

Total time, serving sizes, and cooking level for asparagus and Parmesan cheese.

You all know me by now. I understand all recipes won't be quick and easy, but these are the recipes I gravitate towards! This recipe fits neatly into my quick and easy category!

Ingredients
1 lb. of asparagus
1 cup of water
1.5 tbsp. of butter (total)
1/4 tsp. of roasted garlic salt
1/4 tsp. of pepper
2 tbsp. of grated Parmesan cheese
a few pinches of shredded Parmesan cheese

The Directions for this recipe are easy and depicted in the picture:

Prep for cooking cheesy asparagus.

1. Cut the stems off of the asparagus


2. Lay the asparagus in a pan. Be careful not to bend the tips.


3. Add the water and 1/2 tbsp of butter to the pan.


4. Cook the asparagus on high for about 5 mins, turning the asparagus along the way. This number may vary depending on the kind of stove you have and the thickness of the asparagus. During this step you want to cook the asparagus until it's about half done. The asparagus should still be a little firm.


5. Once this is done, drain the pan of all liquid.


6. Put the asparagus back into the pot and add the remaining 1 tbsp of butter, the grated Parmesan cheese, roasted garlic salt, and pepper.


7. Saute these ingredients over medium high heat until the butter is melted down and the Parmesan cheese is a golden brown color.


8. Once you take the asparagus out of the pan, sprinkle with the shredded Parmesan cheese.

As you can see, my asparagus stalks were very thin. I love vegetables. When I say this recipe yields two servings, I mean two good-sized servings!

This was my first time cooking asparagus. The first time I ever tried asparagus was last year during my birthday dinner. It was better than I thought it would be so ever since then I'd been saying I was going to try cooking it myself. The asparagus at the restaurant used a creamy cheese sauce as opposed to the kind of cheese used in this recipe. My "holiday break" is officially over. I've started working out again, so I have to be more cognizant of what I'm putting into my body. That means healthier eating! I know all the cheese and the butter isn't the healthiest BUT you can alway replace these ingredients with low fat/no fat cheese and/or butter. I still plan on trying this recipe for Creamy Parmesan Roasted Asparagus some time in the near future, but so far so good on the healthier eating (for the most part)! :-)

  1. This is a yummy recipe. I've only made asparagus one or two times, but I do like it. I always thought asparagus was such a fancy, expensive vegetable (how I think of artichokes). Maybe that's because I grew up only exposed to certain veggies like beans, greens, etc. Anyways, now Aldi's carries baby asparagus at a super affordable price and that's my go-to place. TFS!
