A Healthy Gravy Recipe!

I posted a post earlier in the week about my amazing French toast. This recipe falls into that same category. It's amazing and it's healthy. I must admit, I haven't been working out lately. I've picked up my old hobby of playing softball and that's replacing my exercise routine. I'll eventually find some type of schedule that'll allow me to get a workout or two in throughout the other days of the week, but supplemental to my physical exercise is the healthier eating which I'm indeed doing better with.

This post talks about one of my favorite things to cook and eat! Since making a choice to eat healthier, I haven't had any meals with that one ingredient in it for a long time!! I did a little researching over the weekend to look for healthy ground beef recipes and just so happened to find this jewel: Meatballs and Peppers (via)!! Your level of excitement for bell peppers will determine the level of turnt-upness you reach when you hear the name of this meal! I love peppers! This meal included two of my favorite things to eat AND was under 300 calories. I got excited so I decided to make this recipe my own!




Ingredients
1 cup of thinly sliced green peppers
1 cup of thinly sliced red peppers
1 cup of thinly sliced yellow peppers
1/3 cup of water
1 can of beef consommé
1 pound of ground beef (92% lean, 8% fat)
1 tablespoon of finely chopped onion
~2 tablespoons of breadcrumbs
roasted garlic salt (See Sidenote #1)
pepper
~1 teaspoon of liquid egg whites
olive oil
2 tablespoons of flour
1/4 cup of water
dried basil

Directions
1. Combine the peppers, water, and beef consommé in a saucepan and bring to a boil.
2. Cover, reduce the heat, and let simmer for about 20 minutes.
3. Put the ground beef in a bowl and season with roasted garlic salt and pepper.
4. Add onions, breadcrumbs, and egg whites to the ground beef mixture.
5. Shape the mixture into meatballs.
6. Heat olive oil in a large nonstick skillet.
7. Add the meatballs and cook until brown
8. Combine the flour and 1/4 cup of water in a small bowl and stir with a whisk.
9. Add this to the bell pepper mixture along with the meatballs and cook for another 3 minutes.
10. Stir in the basil
Sidenotes: 1) I recently discovered roasted garlic salt through another recipe and found that it was the best thing on EARTH! I had a hard time trying to find it in the grocery stores around here, but that's not saying much because most of the grocery stores in my immediate area are terrible!! So, if you don't have roasted garlic salt, you can use regular salt and garlic powder OR crushed garlic. 2) The recipe calls for the meatballs to be about 1 inch around, but you can make them bigger or smaller depending on what you prefer. You could even make patties! Just know that the Nutritional Information is based off of 1 inch meatballs.
...and VOILA!


I'd already started eating this before I realized I hadn't taken a picture of it yet...so I had to clean the plate up a bit to give you guys a decent picture! This meal didn't take long to prepare or cook. I ate it with rice and would have probably prepared something green to go along with it had I thought about that upfront. I also had to hunt down the beef consommé because the grocery store I went to didn't have it.

Those numbers aren't half bad, right?! Something so good just seems like it would be bad for you!! This is definitely a recipe I'm recommending for you all to try.

  1. Looks good! I made some meatballs the other day with extra lean ground chicken (as you know I don't care for the taste of beef) and they were good. I am getting into smoothies for breakfast which I will have recipes on shortly. Tonight for dinner is some whole wheat cauliflower pasta with some type of sauce (haven't decided yet) and maybe some spicy sauteed kale. I love kale!
